The majority of hormones used in beef cattle production are via implants, which are small pellets "injected" underneath the skin of the ear. They continually release hormones to improve rate of gain and feed effeciency. They are generally used in steers (castrated male cattle). This is a common practice in commercial beef production. However, the hormones and "chemicals" you are referring to are not retained in the meat. All drugs (antibiotics, vaccines and growth promotant hormones) used in the USA are highly regulated by the FDA (Food and Drug Administration), which also regulates drugs prescribed to humans. There is a minimum withdrawal time for each drug that is determined by doing studies and testing the meat with sensitive assays after slaughter. The result of this is, there is NO difference between the hormone levels of organic and commercial meats. All animals produce hormones, its a fact of life. However, the amount of hormones in animal products (both organic and commerially produced) is not enough to have ANY effect on someone eating that meat. The same goes for organic, rBST-free, and commercially produced milk. There is absolutely no difference in the type or amount of hormones present in any type of milk. All of them are safe to drink, and healthy. There are also no antibiotics present in the meat or milk of US produced animals. There is no reason to avoid eating meat or animal products produced in the USA. In fact, it has been shown that eating animal proteins (meat, milk and eggs) is important and necessary for healthy brain development in children.

Many larger farms use hormones to make production much more possible. I would assume with only 100 head that ranching was more of a hobby or you had other sources of income. Larger farms need to make a profit. They use hormones to regulate reproduction among their herds. There is no proof that these hormones cause any harm to humans. I am not sure on the exact numbers, but I know that a professor in ANIMAL SCIENCE told me that the amount of hormones is thousands, if not millions times smaller than the amount of hormones we actually have in our bodies.

It is not just vegan hype. I am not vegan and I stay away from meat/dairy sources that are not organic. I don't want gentically engineered meat and milk, pumped up with growth hormone drugs (like rbGH and growth factor I) and antibiotics.
